Chicken Adobo (chicken stew)

Preparing adobo is simple and requires but a handful of ingredients. Chicken is cooked in soy sauce & vinegar, giving it a slight vinegar flavor. It’s also cooked with garlic, bay leaves, and ground pepper. The standard accompaniment to adobo is white rice, but can be roasted potatoes. In good-tasting adobo, there’s no spice flavors to dominate, but rather the taste is a delicate balance of all the ingredients. My foodie husband loved this chicken dish and our 4 and 6 year old boys finished their plates which says a lot!
