Lamb chip chop (Agnello ’ncip ’nciape)

After watching Lidia of Italy prepare this on her cooking show, I decided to try it with the experienced Italian cook Mamma Meta by my side. How could I go wrong! It turned out fabulous and felt simple to make. The ‘ncip ‘nciape, pronounced chip-chop is the sizzle sound of the meat cooking! Here’s the recipe from my kitchen… I think you’ll really love this one, easy enough for a casual meal or fabulous enough to impress dinner guests.
