Pepperoni Arrostiti (Roasted Peppers)

Easy – roasted peppers. From the Ruocco family, I learned this simple method of roasting peppers and marinading them in extra virgin olive oil and lemon juice, adding a nice gourmet touch that’s really easy. Each of the below mixtures, lemon-juice or balsamic vinegar, creates velvety textured sweet-and-sour peppers that are great served as an accompaniment to any grilled meats – chicken, beef or fish. Also delicious served as hors d’oeuvres with slices of baguette or with cheese & crackers.
