Asparagus

  1. Asparagus bunch (chop the coarse ends off, about 1-2 inches)

  2. Extra Virgin Olive Oil, couple tablespoons

  3. Kosher Salt, a few pinches

  4. Lemon Zest of 1 lemon

  5. Parmesan Cheese, 1/8 cup (optional)

  6. Red Pepper Flakes, a few sprinkles (optional if you want heat)

Position oven rack in upper third, turn on high broil. Place trimmed asparagus on a baking pan, drizzle lightly with oil and toss a little to coat, but don’t drench. In fact if you have olive oil spray, that works best. Sprinkle lemon zest, a few pinches of salt, parmesan and red pepper. High broil 5 minutes for thin asparagus stalks, increase cooking time 1-2 minutes for thicker stalks. Serves 4-6.
